While most lobsters are a muddy green and rust color for camouflage purposes, there's a one in two million chance of finding a cobalt blue lobster. They're a symbol of good luck and good fortune. The blue colouration is caused by a genetic defect that causes the lobster to produce an excessive amount of a particular protein that gives the lobster the unique color.
